Rice Crunchers


Ingredients:-

1 cup rice flakes
1/4th cup all gram flour
1 cup water
Salt to taste
1/4th cup cornflour
1 tsp garam masala
1 tsp red chilli powder
1 tsp mixed herbs
Oil for frying

Method:-

1. Grind rice flakes in a grinder to a fine powder. Take it out in a bowl and add to it all gram flour. Mix them very well.
2. In a pan take water. Add to it salt and let it boil.
3. As soon as it starts boiling, switch off the flame and add the mixed flours slowly in the solution. Keep stirring it to avoid formation of lumps.
4. Cover it with a lid for 5-10 mins.
5. Transfer it to a plate. Spread it roughly in a plate to cool faster. Next add to it cornflour. Mix it very well and form a smooth and soft dough.
6. Now pinch a small ball from the dough and form long yet thick sticks from it. Prepare all the crunchers in this manner.
7. Heat oil. Fry all the crunchers in medium flame so that they are well cooked from within. Fry till they turn golden brown in color. Take them out in a bowl.
8. In a small bowl, mix garam masala, red chilli powder and mixed herbs.
9. When all the crunchers are ready, sprinkle the spices and mix them very well with the fried crunchers. 
10. The rice crunchers are ready to munch. You can serve them with tea or coffee. This can also be stored in an air tight container for 2 weeks.


Milk Peda


Ingredients:-

1 litre milk
1/4th cup sugar
2 tbsp curd
1/2 tsp cardamom powder
A few saffron strands
A few cardamoms for garnishing

Method:-

1. Take a large pan or kadhai and grease it. This does not allow the milk to stick at the bottom.
2. Heat milk in the pan and keep stirring it occasionally till you get the first boil.
3. Once the milk starts boiling, add sugar to it and give it a stir. Add saffron strands to it.
4. Keep stirring the milk in intervals till the milk gets to half its original proportion. Keep scraping off the cream from the sides of the pan and gently mix with the milk.
5. Add curd to the milk when the milk proportion gets to half its original volume. You can see the milk getting crumbled up.
6. Let all the water evaporate as we only need the solids. Once all the water has evaporated, turn off the flame and allow the mixture to cool for some time.
7. After cooling, rub the paneer against your hands so as to get a soft creamy texture. You can also put the paneer in the grinder and bring it to get a smooth texture.
8. Next, take some portion of the paneer and roll it with your hands and give it the shape of a peda. You can garnish them with some cardamoms or pistachios and serve. 
9. Keep them in the refrigerator in an air tight container.

Dalgona Coffee


Ingredients:-

1 tbsp coffee powder
1 tbsp sugar
1 tbsp hot water
Milk (hot or cold)

Method:-

1. In a mixing bowl take coffee powder, sugar and hot water. Stir it well, so that the sugar dissolves. Remember to take all the 3 ingredients in equal proportions.
2. Whisk it well for about 10-15 mins till you get a foamy texture. You will naturally see the color also change.
3. In a glass fill 3/4th of it with either hot or cold milk.
4. Next, with the help of a spoon place the dalgona over the milk. You will see the dalgona settled over on top the milk.
5. Your Dalgona coffee is ready to be served.

Honey Chilli Potato


Ingredients:-

For Potato Wedges:

2 potatoes, wedges
Water for boiling
1 tsp salt
2 tbsp cornflour
1/2 tsp black pepper powder
Oil for frying

For Honey Chilli Potato Gravy:

2 tbsp oil
1 garlic clove(chopped)
1 inch ginger(chopped)
2 green chillies(slit)
1/4th onion petals
1/2 capsicum cubed
Salt to taste
1 tsp chilli sauce
1 tbsp vinegar
1.5 tbsp soya sauce
2 tbsp tomato sauce
1 tbsp cornflour
1/4th cup water
2 tbsp honey
1 tsp sesame seeds roasted

Method:-

1. Firstly, in a pan take water and add to it the wedged potatoes and salt. Boil the potatoes till they turn soft. Once they turn soft, drain them off and transfer them to a mixing bowl. There should be no water in the potatoes. Add cornflour and black pepper powder to it and mix them well with your hands.
2. Heat oil in a kadhai. When the oil turns hot, drop in those potatoes and deep fry them till they turn crisp and golden brown in color. Drain the excess oil from the potato wedges and keep them aside.
3. In a pan heat oil. Add to it finely chopped garlic cloves, finely chopped ginger and green chillies. Saute them well.
4. Next add onions and capsicum to it and cook them for a minute.
5. To it add chilli sauce, vinegar, soya sauce and tomato sauce. Mix everything well and cook them for a minute. Add salt to it.
6. Take cornflour and water in a bowl and mix them well so that no lumps are formed. Add this cornflour solution to the gravy. Stir them quickly till you get a light brown gravy. Turn off the flame.
7. Now add honey to it and mix them well. Next add the potato wedges very carefully and mix them gently.
8. Add sesame seeds to it and mix them with the honey chilli potatoes.
9. Serve them either as a snack or with fried rice. 





Red Sauce Pasta


Ingredients:-

200-250 gms Pasta

For Red Sauce:

2-3 fresh tomatoes or 3/4th cup canned tomato paste
2-3 tbsp water
2 garlic cloves minced
Salt to taste
1 tsp black pepper powder
1 tbsp oil

For Pasta Gravy:

2 tbsp onions(chopped)
2 tbsp capsicum(chopped)
2-3 tbsp butter or oil
Salt to taste
1/2 tsp black pepper powder
Cheese

Method:-

1. Boil and cook the pasta till they turn soft. Drain the water off and keep aside.
2. Let's first prepare the red sauce gravy. If using fresh tomatoes, first boil them and then blend them off in a blender. In this case, you need not add any amount of water later on as the tomatoes contain enough water in it.
3. In case of using canned tomatoes, add some amount of water to it.
4. To the tomatoes, add garlic cloves, salt, black pepper powder and oil. Mix everything well and keep aside. You can prepare your red sauce beforehand and store them in the refrigerator.
5. To make the pasta, heat oil or butter in a pan. Add onions and saute them till they turn translucent. Next add capsicum and cook them for a minute. Next add salt and black pepper powder to it. Mix them well.
6. Next add the red sauce to the veggies and cook them well for a minute till the oil starts leaving the gravy.
7. Now gently add the cooked pasta and mix them carefully. After a minute of cooking, transfer them to a serving plate and garnish them will lots of cheese. Serve immediately.
