Milk Peda


Ingredients:-

1 litre milk
1/4th cup sugar
2 tbsp curd
1/2 tsp cardamom powder
A few saffron strands
A few cardamoms for garnishing

Method:-

1. Take a large pan or kadhai and grease it. This does not allow the milk to stick at the bottom.
2. Heat milk in the pan and keep stirring it occasionally till you get the first boil.
3. Once the milk starts boiling, add sugar to it and give it a stir. Add saffron strands to it.
4. Keep stirring the milk in intervals till the milk gets to half its original proportion. Keep scraping off the cream from the sides of the pan and gently mix with the milk.
5. Add curd to the milk when the milk proportion gets to half its original volume. You can see the milk getting crumbled up.
6. Let all the water evaporate as we only need the solids. Once all the water has evaporated, turn off the flame and allow the mixture to cool for some time.
7. After cooling, rub the paneer against your hands so as to get a soft creamy texture. You can also put the paneer in the grinder and bring it to get a smooth texture.
8. Next, take some portion of the paneer and roll it with your hands and give it the shape of a peda. You can garnish them with some cardamoms or pistachios and serve. 
9. Keep them in the refrigerator in an air tight container.
