Ingredients:-
To Cook Vermicelli:
1 cup vermicelli
2.5 cups water
1/2 tsp salt
1/2 tsp oil
Other Ingredients:
2 tbsp oil
1 tsp mustard seeds
1/2 tsp urad dal
1 tsp chana dal
1 tbsp peanuts
1-2 strands curry leaves
1-2 green chillies(slit)
1 tsp ginger(finely chopped)
1/2 onion
1/4th cup carrot(finely chopped)
1/4th cup peas
Salt to taste
1/2 lemon
Coriander leaves for garnishing
Method:-
1. Take vermicelli in a pan and roast it till it turns golden brown. Take it off from the pan.
2. In a saucepan, pour in water. Add salt and oil to it. Boil it. When the water starts boiling, pour in the roasted vermicelli carefully. Cook it for 2-3 minutes or till it turns a bit soft. Drain off the water and allow the vermicelli to cool completely.
3. In a kadhai heat oil. Add to it mustard seeds, urad dal, chana dal and curry leaves.
4. Next add to it peanuts and roast it till it turns crunchy. Next add to it green chillies and ginger and saute it well.
5. Further, add onions to it and saute till it turns light golden. Next add to it carrot and peas to it and saute it for a minute.
6. Next add salt to it and saute it well. Cover and cook the vegetables for 2 minutes or till the veggies turn soft.
7. Add in the cooked vermicelli and gently mix it well. Avoid over mixing it as the vermicelli will get mashed.
8. Lastly, add in lemon and coriander leaves. Give it a gentle mix.
9. Vermicelli upma is ready to be served.
